Mexican Pie

Oven 350 --- 6 servings
1 lb Ground Beef
1 onion ~ chopped
3/4 cup salsa
1 package "Ortega" taco seasoning mix.
1/4 cup water
1 canned whole kernel corn ~ drain
1 canned black olives ~ drain or ready 1-canned slices black olives
1 package (8.5oz) corn muffin mix
1 cup shredded cheddar cheese or any kind of cheese Skillet, cook ground beef and onion until beef is no longer pink, drain. Stir add salsa, taco mix, water bring to bil reduce heat to low. Cook for 5 min. add Corn and olives. Beef into ungreased 9 x 9 or 8 x 8 square baking dish. Prepare bowl for corn muffin mix - according to package directions. Stir-in cheeses until smooth spread over on beef. Bake Uncover. 350-oven bake for 30 min or until crust is golden brown.

Tips.
Best Ortega taco mixes because taste is better and sweet. Other kind of taco seasoning mix is ok.

Store
Black olives large or med or small size up to you like. I use med. black olives and cut slices. Cheaper than ready canned slices. unless if it's on sale :) depend on store sale. .
